I had plans to make and share a different dish today. But as I was flipping through Grains and Greens last night, I saw this recipe and knew it had to be shared. Immediately. Then baked asap and served piping hot with the scallion butter, alongside a bowl of yesterday’s Black Bean with Lime Soup. I’m about to eat the combo for lunch- as soon as this post goes up.
Please excuse the not full pan of bread in the images… I made the cornbread this morning, and it seemed unfair to not let hubs have a warm piece, fresh from the oven, to bring in his lunch. I can’t wait for him to try the scallion butter. It is epically good- creamy, rich and satisfying.

It’s always about this time of year that I start to dream of travel. Especially tropical travel. Something about the daily bundling up in scarves, mittens and heavy winter jackets combined with the shorter days and frosty temps makes me ready to jet asap to warmer climates. Preferably with an ocean near by.
Thing is, that when you’re trying to eat as healthy as possible, travelling can become more tricky. It’s why this little (well, it’s actually pretty big time) cruise I’m about to let you in on looks so darn appealing. It’s called The Holistic Holiday at Sea, and not only do you get to eat delicious vegan and macro food, but you can also take part in all sorts of inspiring classes, lectures, cooking demonstrations, and of course, there’s the whole cruise bit too. In the Caribbean. If we hadn’t already made travel plans this year hubs and I would be there in a flash… and we’re already saving our pennies so we can go next year. To travel and eat delicious food without any worries? Sublime.
Speaking of delicious food… we thought it would be fun to do a little give away here on the site {scroll down to the bottom of the post for details}. You see, not only is there an amazing cruise, but there IS ALSO A COOKBOOK!! Grains and Greens on the Deep Blue Sea is “… a titanic collection of the most popular vegetarian dishes served aboard the Holistic Holiday at Sea Cruises.” So even though the weather outside might be cold, you can still enjoy a little taste of the deliciousness you can eat on board. Heck, turn on those sun lamps, crank the heat, throw a towel down on the floor, download some soothing ocean wave tracks, don your swimsuit and sunglasses and you can have a little tropical party right there in your own living room. If you really want to go totally hard core, rub on some eco sunblock- nothing says holiday like the smell of sunblock… um, not like I have tropical parties here on a regular basis… er… really….) You could see your breath, a miniature cumulus cloud puffing up magically with every exhale. The grass was frozen, shining silver white blades glistening in the pre dawn light. Crunch, crunch, they sounded underfoot, as hubs and I made our way around the large wooden veranda, sneaking in through the side door careful not to disturb the guests who were still sleeping soundly upstairs.
Two large carafes of fresh tea were waiting, alongside a rustic pitcher of pure well water. Kukicha, the staple we’d been drinking at home for a few years by then, and Roasted Barley, which we had purchased with good intentions but had quickly been pushed to the depths of the cupboard and then forgotten… (until the moths…. glass jars people, glass jars for your dried pantry goods. Trust me).
In hushed tones we spoke, “Which one are you having?”
“Hmmm…. I think I might try the barley tea today!” Hubs whispered, cheeks flushed pink from the frosty temps outside.
“Ooh! Fun choice! I’ll have some too!” And we each filled a steaming cup.
One hand warmed by holding a ceramic mug, the other by our entwined fingers, we crept back outside and sipped our tea, waiting for the first pale golden rays of early spring sunshine to fill the sky. My training at the KI, a whole new career and path of life, was about to begin. Quietly, holding on to time, we savoured our last early morning tea together before hubs made the long drive back home, alone.
It’s always the same- each first sip of a cup of steaming barley tea transports me directly back to that moment. Be it in the middle of the hot, humid summer, or now, the first week of December, with spring’s golden morning light still months away.
“No potato?”
These two words were almost a deal breaker for me. Growing up on the prairies, we ate a lot of potato. Mashed, sliced, boiled, baked, stuffed, french fries, potato salad, pan fried when there were leftovers. I can practically smell it as I write… and I’m not going to lie, my mouth is watering just thinking of epic potato deliciousness. Yup. I love(d) potato.
So when I was first starting macrobiotics and read those two little words, it took all my willpower not to close the book and sprint to the pub to fill my face with greasy, salty, french fry goodness in blissful denial. Thank goodness I discovered this magical creation, played around with it in the kitchen for a while, and came up with this variation.
It’s such a ringer for the real deal that even friends of ours mistook it for the real thing. The proof though, was when Hubs said to me last night (like he says each and every time I make this!) “Man… I just can’t get over that this isn’t actually mashed potato.”
This one’s a winner, and as a bonus (can you believe it gets even better!?!) this mash is totally delicious fried to golden perfection in a little oil the next day. Oooh yeah.

As promised, my favourite way to use left-over kinpira! We’ll also use it freshly cooked this way, as it is soooo easy for portable lunches or dinners on the go. You don’t even have to cut the roll, opting instead to eat it like a giant nori burrito. Yummy.
Add in cucumber, tempura tofu, sauteed shiitake mushrooms, avocado (in the south or in the summer) and/or anything else that makes you happy.
