Cornbread with Scallion Butter

I had plans to make and share a different dish today. But as I was flipping through Grains and Greens last night, I saw this recipe and knew it had to be shared. Immediately. Then baked asap and served piping hot with the scallion butter, alongside a bowl of yesterday’s Black Bean with Lime Soup. I’m about to eat the combo for lunch- as soon as this post goes up.

Please excuse the not full pan of bread in the images… I made the cornbread this morning, and it seemed unfair to not let hubs have a warm piece, fresh from the oven, to bring in his lunch. I can’t wait for him to try the scallion butter. It is epically good- creamy, rich and satisfying.

Scallion Butter!! It looks amazing and I must try. I’m going to a potluck on Saturday and will make this! This and perhaps some of that soup below.
