easy roasted tofu recipe

Well, hello there, March!! Can we pretend that Spring is almost here? I bought two new pairs of shoes yesterday (A pair of grey and white polka-dot Tom’s shoes AND Tom’s wedge booties…. on mega sale!! Hooray!!) and I reeeeeeeally want to wear them, sans socks, with skinny jeans and a flowy tee. But since it basically snowed a knee high amount of heavy, wet slush the other day, I’d say we’re still at least a few weeks away from any kind of sock-less shoe wearing… hey, a girl can wistfully dream, right?

In the meantime, it’s hovering around zero and winter jackets and fleece lined rubber boots are the norm to keep warm. Essentially, perfect weather to bust out this easy roasted tofu recipe. It’s one of my go-to’s on nights when there’s not much time. Plus, if you make lots it’s easy to shove into a sushi roll or hand roll for lunch the next day. We often roast squash at the same time and have a meal of roasted tofu and squash, water sauteed greens, a grain of some sort and little bit of pickle. Yum!!
