easy roasted tofu recipe

Well, hello there, March!! Can we pretend that Spring is almost here? I bought two new pairs of shoes yesterday (A pair of grey and white polka-dot Tom’s shoes AND Tom’s wedge booties…. on mega sale!! Hooray!!) and I reeeeeeeally want to wear them, sans socks, with skinny jeans and a flowy tee. But since it basically snowed a knee high amount of heavy, wet slush the other day, I’d say we’re still at least a few weeks away from any kind of sock-less shoe wearing… hey, a girl can wistfully dream, right?

In the meantime, it’s hovering around zero and winter jackets and fleece lined rubber boots are the norm to keep warm. Essentially, perfect weather to bust out this easy roasted tofu recipe. It’s one of my go-to’s on nights when there’s not much time. Plus, if you make lots it’s easy to shove into a sushi roll or hand roll for lunch the next day. We often roast squash at the same time and have a meal of roasted tofu and squash, water sauteed greens, a grain of some sort and little bit of pickle. Yum!!

Hi Ruxandra! I love tofu- it can be so fast and easy- and there are soooo many ways to change it up!! I was happily surprised when I was flipping the tofu and all of sudden there was a little heart tofu- so cute!!

Hello everyone. No recipe today, sorry, as life is a little hectic around here at the moment… Thank goodness for chewing!!! Seriously, it has saved me this past week. How did you all find the chewing? Did you remember to chew most of the time? Sometimes? At the very end of each meal, or just for the first part? I’m so curious to hear. Ultimately the most important thing is that we all started to be more aware of how we are putting the food into our bodies. After that, it’s inevitable that the importance of what we feed ourselves will follow suit.

It might sound a little “granola” but it’s like taking the time to chew really allows you the opportunity to tap into some deeper things that are going on- both in your body and in the surrounding environment. I was more aware of, and in control of, my mood, my appetite, my sleep patterns and my digestion… just to name a few things. And all because of CHEWING! So freaking cool.

A happy surprise? By the end of the week my tall (and very fitted) riding boots zipped up like a breeze. No pulling, taunting, squeezing or swearing required. Just observing my natural chewing habits, I found I instinctly want to swallow a little bit right at the beginning of my bite (after about 10 chews), then chew the rest about 30 times before I’m done. Not sure why.
I’m usually the last one finished eating at any table I sit down at, so I think I’ve been doing a pretty good job so far! I’m naturally a slow eater. But I’m much more aware of the early swallow now. Haha. Definitely trying to chew longer!

I also need sometimes to swallow a little at the beginning. It seems that if I focus on not swallowing, I can do it well usually, but not yet all the time.
I feel my digestion is better, I feel comfortable when I chew a lot. Maybe that’s the cause why I sleep better nowadays.
During chewing, I was thinking a lot. Usually not about daily tasks, but rather about nature, out relationship with the Earth, with each other, and things like that, maybe beacuse in the last days I read Ohsawa.
I liked to chew rice, millet, buckwheat, chickpeas and usually all the vegetables, and it was less easy with desserts, noodles and with red lentils.
Thanks for this chew-a-thon, this was a perfect start, I will continue to chew. My fiancé was chewing with me sometimes, it was really great to eat this way together :)

#Chewathon Day 4 + Brown Rice Recipe

So you’ve been chewing the bejeezus out of each and every bite this week- keep it up!! Are you finding it difficult? Easy? Easier than you thought it might be? What’s been the hardest thing to chew? Hubs made strawberry sorbet last night (brrrr, but so delicious!) and that, my friends, was SUPER hard to chew. Cold. Melty. Insanely sweet and fragrant… it had basically melted away before 20 chews, and if I hadn’t already been thinking about chewing I likely would have hoovered this stuff in record time.

So. Sorbet = Hard to chew.

Brown rice, on the other hand? This stuff was created for chewing and gets more tasty and sweet the more you chew it. Although it takes a little time to soak/cook, if you make a big batch you’ll be set for easy and fast rice porridge, rice pudding, fried rice, and any other number of quick dishes over the next couple of days. Woohoo to more time for chewing!

Chewing tip of the day: Try eating your meal with chopsticks. Because you can’t scoop up a ginormous spoon/forkful, using chopsticks basically forces you to take more time eating, thus encouraging more chews!!

I forgot to count the chewing.
At the beginning I counted but later I forgot and was just chewing until liquidy. The breakfast took an hour. Wow.
Yesterday I made some sweet quinoa-oat porridge, it was a little bit hard for me to chew that well.
