Kinpira Nori Rolls (Vegan Macrobiotic Sushi!)

As promised, my favourite way to use left-over kinpira! We’ll also use it freshly cooked this way, as it is soooo easy for portable lunches or dinners on the go. You don’t even have to cut the roll, opting instead to eat it like a giant nori burrito. Yummy.

Add in cucumber, tempura tofu, sauteed shiitake mushrooms, avocado (in the south or in the summer) and/or anything else that makes you happy.

Looks delish! OK, I have to admit I am not up with all the macro lingo and had to look up what kinpira meant on your site. Definitely have to try it! I love to make my vegan sushi with a leftover purple cabbage salad that I make. Soooo good!
